This is the best kind of cheat’s dessert. Store-bought vanilla ice cream gets a swirl of cherry coulis before being sandwiched between two wafers of stroopwafel.
Makes 6 sandwiches
Preparation time 20 minutes
Cooking time 5 minutes
For the cherry coulis
250g cherries, fresh or frozen
50g castor sugar
1/2t vanilla extract
For the ice-cream sandwiches
2-litre tub good-quality vanilla ice cream
12 Hollandse Stroopwafels (Dutch syrup waffles)
Fresh cherries, to serve (optional)
For the cherry coulis
1. Place the cherries, sugar and 100ml water in a small saucepan. Bring to the boil, then simmer for 5 minutes until the berries become soft. Stir in the vanilla. 2. Remove from heat and refrigerate until well chilled.
For the ice-cream sandwiches
1. Allow the ice cream to soften for about 20 minutes, before gently swirling in 1 cup coulis with a butter knife.
2. Place 6 metal ring cutters onto a metal tray and fill each ring with ice cream. Freeze until set.
3. Once set, place each of the six rings onto a stroopwafel. Gently remove the ring (use a cloth soaked in warm water to ease away the ring). Top with another stroopwafel and serve.
