Luyanda’s Office lunch ideas

Deciding what to eat for the week at the office is always a struggle. It’s easy to fall into the trap of buying takeaways for lunch instead of making something nutritious and healthy.  We asked Insta-famous food blogger Luyanda Mafanya to share some quick, affordable and healthy ideas you can make for your skaftin (lunch box).

Green Bean Salad

What you will need:


Baby spinach

Parmesan shavings

Green beans

Basil pesto

Olive oil

Squeeze of lemon




Roast Vegetable salad

Another salad I love is a roast veg salad because I like to use leftover veggies from the night before and it can be any combination of roast vegetables. Add salad leaves of your choice – rocket, baby spinach, lettuce or watercress and finish off with a cheese of your choice; feta, parmesan, Halloumi, ricotta, mozzarella or any other favourite.


Pita or wraps

Stuffing pita pockets with an array of ingredients is a nice way to add an interesting twist to your office lunches.

Add some store-bought falafel, hummus, eggplants, and a quick salsa if you want to try something meat-free or you can try chicken strips, beef strips or lamb strips.




Jars are quite a trend and generally easy to put together and reuse. You can now make a wholesome warm meal in a jar for lunch
