Recipe: This Artist-Inspired Sunshine Salad is a Great Braai Side

Grilling your corn on the braai is the secret to a great sunshine salad

This summer salad of green and gold hues is perfect for a get-together braai or outdoor lunch to celebrate the beauty of a blooming garden. It is easy, healthy, and full of flavour by virtue of colourful produce and punchy flavours that cut through boring leaf-based salads. The best salads (in our expert opinion), are those that are bright, colourful, and optimistic.

This summer salad was inspired by South African artist, ceramicist, and founder of Chandler House, Michael Chandler who lets fresh seasonal salad ingredients shine.

“This recipe is special to me because it is one of the first recipes I created using pure intuition, which indicates that I am finally beginning to understand how flavours work. I love serving this to guests as it’s really easy to make, it can be made ahead of time, and it looks spectacular in one of my blue and white bowls,” says Chandler.

Chandler’s tip for elevating occasions is to focus on the food - beautifully served on his hand-crafted ceramics, “I am very lucky to be a ceramic artist who can serve food on pieces that I’ve handmade in my studio. And so I like to keep things simple with a focus on the food and the pieces I make. Flowers and candles are a must for evening get-togethers."

Sunshine Salad Ingredients

4x Mieles, boiled or braai’d

1x wheel of feta cut into small cubes

A handful of chopped coriander

A handful of chopped parsley

A tablespoon of chopped chives

1/4 of one finely chopped onions

To make the salad dressing

A tablespoon of freshly-squeezed lemon juice

Two tablespoons of high quality olive oil

A pea-sized portion of hot, English mustard

Salt and pepper to taste

Method

1. Shave the cooked corn kernels from the cob with a knife, and break into smaller pieces with a fork.

2. Stir in the herbs and feta

3. Mix the dressing into the salad and enjoy!
