Cape Town's Most Exclusive Dining Event Brings Two Culinary Icons Together at Mount Nelson's Amura
Cape Town has become one of the world's most exciting dining destinations, where exceptional local produce meets global culinary talent. This August, that reputation reaches another milestone as Amura by Ángel León, inside Mount Nelson, Belmond Hotel, hosts one of the year's most anticipated gourmet collaborations.
For four evenings only, Spanish chef Ángel León and French chef Alain Roux – whose restaurants collectively hold six Michelin stars – will share a kitchen in a rare residency that brings two different culinary philosophies together under one roof.
Instead of an exhibit of prestige alone, the collaboration celebrates mastery, seasonality, and the relationship between land and sea, themes that have increasingly defined Cape Town's luxury dining landscape.
Where French precision meets the ocean
Few chefs have shaped modern gastronomy quite like Ángel León.
Known internationally as The Chef of the Sea, León has built his reputation by exploring ingredients that are rarely found on fine-dining menus. His pioneering work with marine ecosystems, sustainable seafood, and edible plankton has transformed how chefs – and diners – think about the ocean's possibilities.
His Cape Town restaurant, Amura, is his first permanent venture outside of Spain, making the residency particularly significant. The restaurant itself reflects his marine philosophy, with interiors inspired by underwater landscapes that create an immersive backdrop for his seafood-led menus.
Sharing the kitchen is Alain Roux, chef patron of the celebrated The Waterside Inn in England. The restaurant has maintained three Michelin stars continuously since 1985 – an extraordinary achievement that has secured the Roux family's place among Europe's most influential culinary dynasties.
Roux's cooking is rooted in classical French technique, elevated through impeccable seasonal ingredients and decades of refinement.
A menu that tells two stories
Each chef presents the culinary identity that has made them internationally respected.
Across the first three evenings, Alain Roux takes prominence with a six-course tasting menu inspired by French tradition but built around South African ingredients. Guests can expect dishes such as his renowned Truffle Croque Monsieur, delicately seared scallops accompanied by sweetcorn and vadouvan sauce, before finishing with the raspberry soufflé that has become synonymous with The Waterside Inn.
The final evening becomes something altogether rarer.
For the first time on the African continent, León and Roux will present a Four Hands Dinner, alternating signature dishes that reflect decades of culinary innovation.
Roux contributes his elegant lobster medallion with white port sauce, while León offers one of his most celebrated creations: his vividly savoury plankton risotto, a dish that has become emblematic of his pioneering approach to cooking from the sea.

The residency also extends beyond the dining room. Two Amura chefs will travel to Spain to train at León's acclaimed restaurant, Aponiente, creating a meaningful exchange of knowledge that reinforces Cape Town's growing influence on the international culinary stage.
South African chef Wandile Mabaso will also join the residency, bringing another layer of local expertise to an event that is already defined by collaboration.
