Bircher Muesli

Preparation Time

5 mins plus chilling time

 

Ingredients

500g (1lb) rolled oats

3 dessert apples, grated

2tbsp chopped dried apricots (optional)

350ml (11fl oz) apple juice

6tbsp plain yoghurt

3tbsp honey

Fresh fruit, such as raspberries, to serve

Roughly chopped almonds or pecans, or toasted flaked almonds, to serve

 

Method

Combine the oats, grated apples, apricots and apple juice in a bowl and mix well. Cover and chill in the fridge for at least 2 hours.

Add the yoghurt and honey, and stir well. To serve, spoon into individual bowls or cups and top each one with fruit, then sprinkle with some chopped nuts.

 

Top Tips

The muesli will keep in the fridge for 2-3 days. It's delicious served with any ripe seasonal fruit.
