Eggs are the perfect filling breakfast or even quick supper, and scrambling is a particularly easy way to prepare them. This scrambled eggs recipe will have you turning them out beautifully in no time at all.

Ingredients (Serves 4)

12 fresh eggs

6oz (170 grams) of butter

chives or fresh herbs

salt & pepper

Method

Break eggs into a bowl, beat with a fork and season with salt and pepper

In a small, heavy-bottomed pan, melt 4oz of butter

Pour eggs and cook over a very low heat, whisking with a small whisk

When eggs are slightly moist and not quite how you'd want to eat them, remove the pan from heat

Add remaining butter and continue whisking for 30 seconds, adding the herbs
