Recipe: Shakshuka, with n’duja and feta

Shakshuka is a vibrant, hearty dish with a rich history, traditionally made with poached eggs in a spicy, tomato-based sauce. This version, with the smoky heat of n’duja and the creamy tang of feta, adds a bold twist that takes this dish to new heights. Full of flavour, it’s as delightful to the eyes as it is to the palate.

Ingredients

1 white onion

1 red, green and yellow pepper

1 jalapeño

2 cloves garlic

5 vine tomatoes

1tsp smoked paprika

1tsp cumin seeds

1tsp red chilli powder

1/2tsp turmeric

2tbsp tomato paste

2tbsp of n’duja

4 springs of thyme

4 eggs

Chives

Feta

Parsely

Sourdough

Method

1. Thinly slice and chop up your onion, peppers, jalapeño, garlic and vine tomatoes

2. Bring a pan to med-high, lace with olive oil, then add in your onions and peppers - sauté for 2-3 mins

3. Season with sea salt, black pepper, smoked paprika, cumin seeds, red chilli powder, turmeric and sauté for further 3 mins

4. Add in your garlic and jalapeño and cook for another minute, then add tomato paste and cook it out till combined

5. Add in a few tbsp of n’duja and all of your tomatoes, season with sea salt, lower heat to medium and cook for 5 mins

6. Add in 150ml of water along with some thyme and simmer for 20 mins with the lid on

7. Remove lid, take out the thyme and check consistency

8. Make a few small divots and crack in your eggs - season and sprinkle over some chives, then cover with the lid and leave eggs to cook for approx. 10 mins

9. Remove lid, kill the heat and top with crumbled feta and chopped parsley

10. Serve with toasted sourdough
