Located in Puerto Vallarta, Mexico’s lively Zona Romántica, the new restaurant by Mexico City-based firm Talo Atelier favours softness over spectacle. Curves replace sharp edges, neutral tones take precedence over bold statements and every design decision is made in service of the dining experience. The result is an interior that feels remarkably calm, despite sitting within one of the city's busiest neighbourhoods.

Founded by designer Tadeo López Toledano, Talo Atelier has built a reputation for spaces that prioritise atmosphere, materiality and human experience. With Evelina, the studio applies this philosophy to hospitality, creating a restaurant where architecture recedes into the background, allowing food, conversation and time spent around the table to become the focus.

A restaurant interior shaped by light, curves and calm

The project began with a clear brief from the owners: create a restaurant that feels delicate, fresh and effortlessly elegant. Rather than interpreting minimalism as emptiness, Talo Atelier developed an interior that acts as a generous backdrop for the colours, textures and vitality of the menu.

From the street, the transformation is immediately apparent. The existing octagonal footprint has been softened through a series of flowing curves and rounded forms that establish a gentle visual rhythm. These sculptural interventions continue throughout the interior, creating a sense of movement while maintaining a feeling of serenity.

Inside, pale timber, sandy-toned finishes and softly upholstered seating create an environment that feels warm rather than austere. Circular tables encourage gathering, while carefully considered lighting shifts the atmosphere throughout the day. Morning and lunchtime feel bright and open; evenings become more intimate as the light softens and deepens.

Curved ceilings, terracotta-clad columns and custom timber furnishings create a warm, immersive dining experience, balancing contemporary hospitality design with the relaxed spirit of Puerto Vallarta.

Mexican craftsmanship takes centre stage

While Evelina's aesthetic appears effortless, its success lies in meticulous detailing and craftsmanship.

Talo Atelier collaborated with a network of Mexican artisans and suppliers to bring the project to life. Hand-applied finishes, bespoke lighting and a terrazzo bar cast on site introduce texture and individuality throughout the space. Every junction, material transition and furniture detail has been carefully resolved, creating a cohesive environment where nothing feels overworked.

The material palette is intentionally restrained. Softly grained timber, textured stone and warm plaster surfaces create a tactile experience that rewards closer inspection. Rather than relying on decorative gestures, the design draws its character from craftsmanship and proportion.

Custom-designed chairs showcase the studio's attention to detail, pairing rounded timber forms with textured upholstery to bring softness and tactility to the dining room.

How food influenced the design of Evelina

What makes Evelina particularly compelling is the relationship between the interior and its culinary concept.

Developed in collaboration with chefs Maycoll Calderón and Marifer Durán, the restaurant centres on three key elements: flour, fire and time. Handmade pasta, slow fermentation and wood-fired cooking define the menu, with the design reflecting these same values of patience, process and authenticity.

One of the project's most poetic ideas is the use of sourdough as a conceptual thread linking food and space. The living, evolving nature of fermentation became a metaphor for gradual transformation, informing everything from the restaurant's soft material palette to its carefully considered atmosphere. The reference is subtle rather than literal, reinforcing the project's commitment to quiet storytelling over obvious thematic gestures.

A new chapter for hospitality design in Puerto Vallarta

With Evelina, Talo Atelier demonstrates that memorable hospitality design does not require excess. Instead, the project succeeds through balance: open yet intimate, refined yet approachable, contemporary yet timeless.

The restaurant introduces a thoughtful new destination to Puerto Vallarta's dining scene while signalling the studio's growing interest in hospitality projects. More importantly, it offers a reminder that great interiors often work best when they allow people, food and experience to take centre stage.
