If Google is your go-to search engine you would have noticed that today, the Google Doodle is a tribute to the History of Pizza.
This is because, according to Google, on this day in 2007, the culinary art of Neapolitan “Pizzaiuolo” was inscribed on the UNESCO Representative List of the Intangible Cultural Heritage of Humanity.
So what does all that mean? UNESCO defines Neapolitan ‘Pizzaiuolo’ as a culinary practice comprising four different phases relating to the preparation of the dough and its baking in a wood-fired oven, involving a rotatory movement by the baker.
While this artful culinary practice originated in Naples, Italy, the art of making pizza has spread throughout the world and there are a few culinary artists in South Africa who do it justice.
Just a couple of months ago the winners of The Porcupine Ridge Pizzeria Challenge, which awards South Africa’s favourite pizzeria according to the public, announced the 2021 winners.
